Look out EOL, Dave Martin has been very quickly creating some superb web services for GBIF data. Check out the GBIF portal wiki or the various name search APIs that produce text, xml, JSON, or simple deep-linking: HERE. As an example of the kinds of things Dave and Tim Robertson have been producing, here is a map gadget showing all the records in a 1 degree cell shared to GBIF from The Nearctic Spider Database:

It would be interesting to collate the web services that connect to the GBIF data portal. There is a lot of stuff out there right now besides what you mention. And speaking personally, building a web service that shows GBIF data on a map isn't necessarily the most interesting example of a service these days.
Indeed, maps aren't particularly useful. I showed but one small component of the full complement of GBIF web services (& there are plenty more coming). What I find particularly progressive are the JSON services. What do you mean "collate the web services that connect to the GBIF data portal"? Do you mean get a list of providers, or do you mean a list of external applications that use GBIF web services? If the latter, that would be an excellent show-and-tell that GBIF ought to consider, i.e. "Look who's using our web services and the cool things they are doing with them" in a manner similar to www.programmableweb.com.
